Ingredients For 12 servings: 20 calçots 1 egg olive oil salt 50 g of flour 200 ml of water Difficulty: Low To prepare this recipe for breaded calçots you’ll need only a few ingredients and fresh quality produce, as the flavour of the calçots is what makes the difference. Choose them tender and in season to obtain the best results. Before buying the calçots, be sure to check their origin. Calçots from Valls are the only ones with a PGI (Protected Geographical Indication), but there are others, such as the ones from Baix Llobregat and from Gallecs, that don't have any seal, but are still delicious. Steps to follow Choose the finest calçots you can find and clean them by removing their outer layer, their roots and the green part of the leaves. Drain them. Add an egg yolk to a bowl with a tablespoon of oil, a little salt and the flour. Stir with a whisk until you have a smooth paste. Add the water and stir again. Leave the batter to rest for 30 min. Whisk the egg white until stiff and mix it gently with the batter you have just made. Dip the calçots in the batter and fry them in plenty of hot oil until golden brown. Drain on a paper towel and serve hot. Presentation and recommended garnishes. To add the finishing touch to the recipe, you can garnish the calçots with mayonnaise, aioli or, better still, xató sauce. You can also buy the sauce pre-prepared. The Conserves Ferrer sauce, for example, uses 100% natural ingredients and is made without preservatives or colourings. Other related recipes that you can prepare Grilled calçots Coca de calçots
