The name arròs brut (dirty rice) comes from the animal blood which is used to give this dish its characteristic colour and flavour. Although this typical Majorcan rice is prepared only with hare, other meat can also be added, such as wild rabbit, thrush, pigeon, woodcock or any other game. In fact, the dish varies according to the hunter’s luck. Shellfish can also be added, particularly lobster, squid, cuttlefish and mussels. Some people also add a handful of peas or a few florets of broccoli.
