The Caves Hill facility is located in the town of Moja, within the municipality of Olèrdola. It stands out for its luxuriant gardens that greet visitors directly in front of the farmhouse, built in 1887. The building has a pronounced Mediterranean character, with outstanding decorative elements in the Modernista style.
The visit continues underground. The historic cellars, built in 1918, offer an interesting counterpoint to the exterior landscape. Here one can see the bottles at rest before their content turns into cava. At the end of the visit, guests can sample some of the ten wines and seven cavas the firm produces.
One of the outstanding elements of this winery is its name, quite odd for a Penedès operation. It is taken from a British immigrant, Mr. Hill, who settled in the region around 1660. His descendants devoted themselves to the vineyards, first selling stocks and later producing wine and cava. Finally, the business was acquired by the Garvey Group.
Cavas Hill has about fifty hectares of its own vineyards planted with the white varieties Chardonnay, Macabeo, Xarel·lo and Parellada. Also, the firm's resident oenologists supervise up to 120 hectares owned by other vine growers. The winery doesn't vinify the grapes, however, but commissions this work to an outside cellar. Cavas Hill also buys wine to complete the necessary coupages for the one million bottles of cava and more than 600,000 bottles of wine of the DO Penedès it markets.
