This sauce contains some products that mark the essence of our culture. Nuts, vegetables, olive oil... try romesco sauce and discover our most Mediterranean flavour. It can be used in many dishes and at any time of the year. The preparation is not very difficult, but it requires a whole process that you will love if you are an avid cook. Instructions The first thing you have to keep in mind is that, the day before, you need to hydrate the nyoras (or romesco peppers). Then, make a cut and scald them with boiling water to remove the pulp, and put it to one side. At the same time, heat the tomatoes and garlic clove. Once done, remove the skin and seeds from the tomatoes and take 6 or 7 cloves of garlic. Toast the hazelnuts and almonds in a pan or in the oven and fry the slice of bread in a little olive oil. When you have everything ready and it has cooled, mix all the ingredients in a mortar or blender. Also add a pinch of salt and a dash of vinegar to obtain a more or less thick sauce. If you do it in a mortar, it's better to start with the garlic and nuts and then add the rest of the ingredients. You're almost there, just taste the romesco sauce to adjust the salt, oil or vinegar to your liking, until you get the flavour you like best. Presentation and recommended dressings Romesco sauce is very versatile and you can use it in countless dishes in our cuisine. It is very suitable for dipping the famous calçots, but it is also commonly used to accompany meat, fish or some vegetables, such as artichokes. You can present it in a bowl or a small earthenware dish or directly on the same plate with the meat or fish. Other related recipes Fish stew Samfaina Steamed mussels
