There are two types of red mullet: rock mullet and mud mullet. Rock mullet (Mullus surmuletus), known by its orange colour and fished in rocky areas, is better quality than the mud mullet. Mullet flesh is semi-oily, has high protein levels and is very nutritive and digestive. Mud mullet (Mullus barbatus), is pale pink in colour, lives in muddy and sandy areas and has a very soft texture.
