The extraordinary quality of this oil is the result of several factors: meticulous cultivation; the region’s climate conditions, with frequent fog and little rain; the use of two varieties, the arbequina and the verdiell; the fact that the olives are harvested directly from the tree with a system called "munyiment"; and a completely cold-pressed production. The result is a fruity fresh olive oil, dense and tasty from the arbequina olive variety. Its aromas are reminiscent of grass, leaf, tomato and green almond. In terms of flavour and colour, two types can be distinguished: the fruity oil, yielded from the early harvest and which is greenish, denser, with a bitter-almond taste; and a sweet oil, which comes from fresh, ripe olives, is yellow in colour and is sweeter and more fluid. In fact, the maximum acidity permitted is 0.5 degrees, although the average is only 0.2. It can be bought directly from cooperatives and other shops in Catalonia, always with the label of the denomination of origin. A good place to do it is the Fira de l'Oli, a fair held at the end of January in Borges Blanques since 1997, offering oil tastings, gastronomic events and other activities related to olive oil. More enthusiastic fans can visit the Olive Oil Theme Park, a foundation based in Masia Salat, in Borges Blanques. There you can see the largest oil press in the world, a collection of oil presses from 45 countries and 54 thousand-year-old olive trees dating from Roman times, for example.
