Ingredients For 6 people: 300 g. strong flour 3 eggs 50 ml. milk 25 g. sugar 15 g. fresh pressed yeast 150 g. butter 5 g. salt lemon and/or orange zest to taste cinnamon powder (optional) For the marzipan: 150 g. ground almonds 150 g. sugar a little water For decoration: candied fruit chopped almond 10 g. pearl sugar 1 figurine of a king or queen 1 dried bean Necessary tools: Kneading machine or bowl (optional) and rolling pin Preparation time: 3 hours (including fermentation times) Difficulty: Medium Steps to follow If you have a mixer or bowl, use it, but if not, use a large bowl. Add the sugar and salt to the tempered butter. Then add the milk and eggs, and continue kneading. Also, add lemon and/or orange zest to taste. Finally, add the sifted flour, where you can also add the crumbled yeast and cinnamon powder (optional). Knead until you can stretch the dough without it breaking, and let it ferment for at least 30 minutes, until it doubles in volume. Keep the dough covered with a cloth, in a place in the house that is not cold and protected from drafts. Meanwhile, make the marzipan by mixing the almond powder and sugar. To get a good texture, you will need to add a little water until you have a soft enough dough that does not break. If you have one, you can process the flour beforehand in a food processor: it will help it release its oil and improve hydration. Roll out the marzipan into a long roll on a floured surface, and place the king or queen and the bean inside, covered with aluminum foil. Also, roll out the dough, put the marzipan on top and wrap it, leaving the cake filled, and finish by giving it a circular shape. Then, let it ferment again using the same procedure, for a couple of hours or until it doubles in volume. You can even leave it for up to 24 hours if you have the time and patience. When it has risen, brush it with egg and decorate with candied fruit, icing sugar and chopped almonds. Place the tortell in the oven preheated to 200 degrees for about 20 minutes. This is the traditional recipe, but if you prefer, you can omit the marzipan or replace it with cream, whipped cream or truffle, opening the tortell in half and filling it once it has cooled. Remember to hide the two figurines in this step so that diners can find the surprise when they eat the cake. Presentation and recommended dressings Accompany it with a golden cardboard crown to crown whoever finds the figurine. The tortell can be enjoyed alone, with a glass of sweet wine, a glass of sparkling wine or a cup of melted chocolate.
