Stuffed squid is among the dishes served particularly on special occasions. They are also much enjoyed prepared with peas when in season, with meatballs or with wild mushrooms. They can be dusted with flour before frying so they become golden brown. It is important to simmer them over low heat so they don’t break up. The lean meat can be substituted for butifarra (Catalan sausage), and you can add raisins, pine nuts and a biscuit to the minced mixture, or even a little mature wine.
