Natural bitter orange conserve is very easy to make, and in the colder months of the year makes a good salad when served with confitted cabbage and a few olives, and dressed with plenty of olive oil. Orange blossom is used in spring to make that most miraculous potion: agua del Carmen, or Carmen´s water. All you have to do is macerate orange blossoms in alcohol and sugar. This remedy has been used since time immemorial for relieving nausea, stomach aches and menstrual pains.
Heat some water in a saucepan. Clean and cut the oranges into quarters. When the water starts to boil add the oranges and a pinch of salt. Allow to cook for a quarter of an hour and remove from the heat. Leave to cool for a few minutes. Place them in a wide-necked jar and fill with cooking water. Close and sterilise the preserve as for jam or marmalade. Store in the larder a couple of weeks before using.
