In Ripoll, Girona, the Forn Mas Palou is a small family business which appeared in 2002. It is one of the few artisanal direct wood ovens remaining in Catalonia. Different types of bread are made there —sliced round country, sticks, roles and wholemeal—, pastries such as croissants and ensaimadas, and different types of cakes. But the star product is the carquinyoli, which it exports to different countries and which it makes with pistachios, almonds, hazelnuts or cocoa. The oven is built in brick from el Bruc, like those formerly made in Catalan country houses.
