Rice pudding is a dessert known throughout the world, which appears to have originated in Portugal. Be sure not to add the pith from the lemon rind, as it gives a bitter taste. Some people prefer to boil the rice beforehand with water for five minutes, and then to add it to the milk and leave to cook a little longer so it is creamier. You can replace the lemon rind with orange rind, and the stick of cinnamon with a vanilla pod.
Heat the milk in a saucepan with the cinnamon stick and the lemon peel. Once it begins to boil, let it simmer for a couple of minutes. Then pour in the rice grains and simmer gently for 16 minutes. Once cooked but not too soft, remove the lemon peel and the cinnamon stick and add the sugar. Stir for one and a half minutes more and remove from heat. Pour the rice into a large serving dish and leave to cool. Before serving, sprinkle with a little cinnamon.
